Throwback Summer Detox Salad (a la Whole Foods)

With summer here, here’s a good Whole Foods salad throwback recipe to add into your rotation.  It will last and feed you and loved ones for days.


Whole Foods “Detox Salad”wholefoodssalad

2 heads of broccoli (large stem base removed)

1 head of cauliflower

2 medium carrots

1/2 cup parsley, chopped fine

1 cup sunflower seeds

1 cup dried fruit (wild blueberries, golden raisins, chopped figs, whatever you like)

Juice of 1 lemon

2 TBS Apple Cider Vinegar

1 TBS maple syrup


In a food process, process the the carrots, cauliflower, and broccoli (will take a few rounds).  Add to a large bowl and mix in the rest of the ingredients.  It makes A LOT, so cut the recipe if you’d like.  For added sweetness, add a drizzle of maple syrup to you individual serving before eating.  Enjoy!
